School is now in session!

This has been a crazy week so far! Scott started school this week; he is loving it! Along with school Scott has started his coaching position with the Asbury Tumbling Team. He has already met a lot of kids and he is really enjoying the new social life here in Wilmore. Up until now Scott has been so busy working, looking after Landon, and helping me with the house work that he has not had the opportunity to meet a lot of people. As weeks pass by we are becoming more and more involved in our community and it is feeling more and more like home every day. We really love it here; God has been so good! We moved down here with not knowing much of anything as far as what God had planned but He is revealing it a little more everyday. One hard thing about becoming more involved and social is that is very hard to find time for just the two of us.
Landon is at a fun but trying stage in life. He is discovering new things everyday and he is so smart! At the same time he has entered the terrible twos. Oh my goodness it has been hard but fun all at the same time. He is very energetic and always on the go. He is learning new things every day; his patients is amazing he never gives up!

Home

It was so good to be able to go home last weekend! I just happened to have a four day weekend the very same weekend of my niece's first birthday. So I decided to take Landon and go home for the weekend. It was so nice to see my parents, sisters, and some of my other family that I have not seen in a very long time. One of the best parts of the weekend was being able to worship at home (Emmanuel Church) on Sunday Morning! It was wonderful to see so many of my close friends and family! I am so thankful that I have such wonderful people in my life! God is so good and has blessed my family in so many BIG ways. Although it was great to go home for a short trip I am very glad to be back in Wilmore. Scott and I are getting ready to start the next chapter of our lives...Scott starts school! We are very excited! Everyday Wilmore is becoming home more and more. Recently I was asked to teach the Kindergarten Sunday School class (pending I can have Sundays off) if that doesn't work out I was asked to teach a CLC class on Wednesday nights. I remember growing up going to CLC it was so much fun; I am excited to finally feel like I belong at our church and have been give the opportunity to serve.

My Favorite Meal!

Alright so I was talking to a friend at work today and he asked me if my parents where going to bring Brats with them the next time they come to visit. I said probably not but beer brats were one of my favorite things. Long story short he wanted to know how to make them.

It is really easy!

Bring the beer of your choice to a boil (you only need about 2 bottles per one package of brats)  and carefully place brats in the pot. Be careful the beer can boil over and make a HUGE mess (I learned this the hard way). Once the brats are fully cooked add them to a frying pan and cook for as long as you like. We like them almost burnt! But them in a bun and add your favorite condiments then ENJOY!!

Good for You!

So my neighbor and I have decided to start a little garden in front of our house we are very excited; I even started weeding the area to get it ready. This inspired me to post a healthy recipe. I made a salad the other night that was very very good!

Grilled Chicken and Spinach with Orange dressing:

1 (10 oz.) pkg. of pre-washed fresh spinach
1/2 c. orange juice
3 Tbsp. brown sugar
3 Tbsp. Vinegar
1 tsp. grated orange peel
1/8 tsp. salt
2 medium shallots
4 boneless chicken breast halves, pounded
1/4 tsp. black and red pepper
6 slices of orange, halved
1 1/2 c. strawberries


Chicken:
Heat grill
Sprinkle one side with pepper
Put pepper side down on grill
Cook 5 min.
Lightly sprinkle with pepper again
Slice chicken crosswise
Place on spinach and add strawberries

Dressing:
Combine orange juice, brown sugar, vinegar, orange peel, salt, and shallots
Mix well in a sauce pan and bring to a boil
Pour over spinach immediately

This is perfect as a summer dinner! It is very easy, yummy, and healthy...ENJOY!!

App of the Week

Hey everyone there is an app that I discovered probably a year or so ago that I totally love! It is called Pepperplate. This app is your one stop shop for all your cooking needs. You can add your own recipes or import them from your favorite food website. Having a place to store all your yummy recipes is great but what about when its time to plan your meals and go grocery shopping? This is the app for that as well! This is what it look like on my iPhone:


















One of my favorite things about this app is the fact that is this also online!! This makes it very easy for me to add my recipes and create my meal plans and shopping lists even if I don't have my phone and iPad!

Opportunities!

There are a lot of great things that are going on here in the Ehle house! I became an Uppercase Living Independent Demonstrator! It has been a very fun experience so far, and I am enjoying every second of it. I am almost done with my first year of school which is exciting. There is a lot to do all the time and I am only becoming more and more busy (just the way I like it). Scott is getting ready to start school himself and he can't wait. We spent some time with our neighbor tonight and she is great. She has asked Scott to join a ministry opportunity at Asbury University! This is very exciting for him he has already met some people that he will be going to school. I tell you all more about his the opportunity if he gets to participate (it has to be approved because he is a student).

Changes

Things have been really busy for us here in Wilmore and I thought it was about time I updated everyone. Our lives have been pretty uneventful just busy. I continue to work full time and I am about to start my 6th month of school. Going back to school was the hardest and best decision that I have ever made. The biggest changes have affected Scott. He got a job at Starbucks; he is really enjoying it there. Second Scott has been officially been accepted to Asbury University. Since moving to Wilmore we have always known that this is where God wants we just didn't know why.
God has been using this chapter in our lives to teach us a lot. Currently God has been teaching us about timing and plans.
Scott and I have had OUR plans in mind and what WE wanted. One thing that we have learned these last several months is that OUR plans and GOD'S plans are different. Scott and I are learning everyday why God brought us here.

"For I know the plans I have for you," declares the Lord, "plans to prosper you and not to harm you, plans to give you hope and a future. (Jeremiah 29:11 NIV)

What an amazing promise! Scott and I have decided to not ask God why but to just let him work and see where God takes us.

I am hoping to be able to post a little more often now that I have a rhythm down with my school, work and home life.

Save Me!

So my little man Landon has decided that when he is hungry in the night or during nap time that he will snack on his crib! Totally not ok. My crib just screamed "save me". So I asked my amazing mom if she had any ideas, and she had a great one. Here is it an easy, safe, and cute way to protect your cribs from your teething children.

I basically made a tie blanket (I think that is what they are called) for his crib. I purchased fleece on sale. I measured my crib and added about 5 inches to use to the two sides of fleece together. I tried finding a cute monster pattern (that is his nursery theme) but I decided to go with brown instead.


I cut little slits in on both sides of the fleece. 





















Then used strips (that is where the extra 5 inches comes into play) to tie the blanket around the sides of the crib.




















This is the finished product! I did all sides of his crib. It took me about 30 min. but the time it was all said and done. One thing that I think is great about it is that if Landon decides to chew I can just untie it and throw it in the wash!

Easy Salsa...

Hello I have been thinking a lot about what recipe I should post first; I have so many yummy ones. I decided to post one that a lot of people have been asking for, my very easy, very fast, and very yummy salsa!

Ingredients:
1 can of diced tomatoes and green chilies
1 can of diced tomatoes and sweet onions (keep the juice of one jar, I normally drain the tomatoes and onion)
Jalapeno slices to taste (the more you add the spicier)
Garlic to taste (this can also make is spicy) I normally add a couple decent sized scoops with a fork from my jar of pre-chopped garlic.
1/2 tsp ground Cumin
3/4 tsp salt
1/4 tsp sugar
My husband likes it really spicy so I sprinkle in a little chili powder as well

Combine all ingredients into a mixing bowl of choice and stir together.
To blend everything I use my hand blender until it is the consistency that I want.
Cover bowl, I use saran wrap
Place in fridge for at least a couple hours.

If you don't have a hand blender you can use a regular blender.

Where did the year go?

Wow another new year and already things have been changing. Every year Scott and I have decided to choose one thing that we want focus on in our lives. For example last year we were focusing on preparing for a child (especially with the possibility of Down's Syndrome) and being new parents. This year we have decided to get healthy starting with eating habits. I have started cooking dinner and I mean cooking from scratch. It takes a long time but it has been worth it. I have even been making homemade healthy snacks like chips and salsa.  I have also decided that I am going to make it a goal to write about more than just my personal life. We will see what happens!!
